You'll never truly know how someone manages until you're in it.
Even at that point, people may change as the world around them does.
There is a way to get a good read on them, but if you don't ask, that's on you.
Understand how your prospective Manager will manage you by asking them a question that shows their framework during your interview.

What happened the last time you told a direct report you were unhappy with their work?

How have you built a feedback loop into your process?

Walk me through the last time you put a person on a PIP. How did it end?

If we were to ask your team what you need to work on to improve, what would they say?

Tell me something you've learned from your own experience with your Manager that you've used with your team.

What happened the last time you and a rep didn't agree on feedback during a performance review?

How would your team describe the way in which you motivate them?
If they don't give you time at the end of an interview to ask one of these, make it a point to schedule time.
